Radish & Pea Salad
Is this even a recipe? This six ingredient salad is as simple as they come but extremely refreshing. The sweetness of the peas and mint balance out the spicy radishes and the tangy lemon dressing ties it all together. This makes a LOT of salad, 4 very hearty servings, but could probably work as a side dish for even 6 - 8 people depending on what else you’re serving. I actually prefer this salad the next day - it is still super crunchy, but it has soaked up the dressing and feels a bit more cohesive. Either way - it is tangy and delicious.
Ingredients:
1 lb fresh radishes
1 lb sugar snap peas
scant 1 cup mint
Juice of 1 lemon
Scant 1/4 cup EVOO
1/2 tsp salt
Wash all of the produce, obviously. Thinly slice the radishes and add them to the bowl. When it comes to the peas - some people feel strongly about removing the fibrous strings on the peas - I don’t bother unless they come off in the course of chopping, but you can feel free to if you want a very tender salad. Chop the peas into 1/2-3/4 inch segments, basically into bites. Add the peas to the bowl too. This is a very complex recipe.
Tear up the mint into smaller pieces with your fingers. Sure you could julienne it, but why bother?
Combine the olive oil, lemon juice, and salt in a bowl whisking well until they combine. It should make a little less than a 1/2 cup. Dress the salad and toss. That is it.
