Charred Corn & Serrano Salsa
We love salsa in our house and all winter long we’re more than happy to buy jar upon jar of it. Once summer hits and the produce is so good and fresh that it is hard to resist buying more than we can eat - home made salsa becomes the name of the game. It is so easy to make and has so much more fresh crunch and texture than what you get at the store. I love this one in particular because that charred corn smells and tastes like summer street fairs. You can obviously eat it with chips, but I love putting it on top of grilled chicken/fish/tofu for a bright and flavorful dinner.
1 ear of corn
1 serrano pepper
3 small tomatoes
1/4 of a large red onion
Juice of half a lime
Husk the corn and wash the pepper then pop them directly on top of a flame to burn; a grill works great here as does a gas stove. Rotate them as they begin to blacken so you get an even light char all the way around. If you don’t have access to either of those, use the broiler in your oven.
While the corn and pepper cool, dice your onion and tomatoes; then cut the corn off the cob. Stem and chop the charred pepper.
Toss all of the diced up ingredients into a bowl, then squeeze half a lime over, and add salt to taste. Mix it all up and enjoy!
